
My favourite way to make this smoothie is to prepare a few smoothie packs ahead of time, which cuts down on prep time in the morning and provides you with another few days of pre-made breakfasts. I simply wash and chop fresh beets, pears, cucumbers, mangos and ginger and the pre-portion and freeze them the night before in freezer-safe ziplock bags. The next morning I simply add the wet ingredients and blend! You can double, triple or quadruple the ingredients to make additional smoothie packs.
Mango Beet Breakfast Smoothie
Serves: 1 Prep Time: 5 mins
INGREDIENTS
- 1/4 large froze cucumber
- 3/4 cup frozen mango pieces
- 1/2 frozen Bosc pear
- 3/4 cup frozen chopped beets
- 1 inch piece of fresh ginger
- 1/3 cup non-fat Greek yogurt
- 1 1/2 cups cold water
- a good squeeze of lemon
INTRUCTIONS
- Add all ingredients to your blender and blend until smooth.
- Serve immediately.
