Alas, I have to admit that my nutrition has slipped a bit lately. No word of a lie, it used to be stellar. Now, it’s just MEH, at best. I started a new job, I was travelling a lot, I fell in love with someone from the other end of town, then we moved in together, and I added a few members to my family. You get it, life got busy….

For a while I felt ashamed that as a nutritionist who supposedly knows all the tips and tricks in the book, I couldn’t get my shit together and apply any of my great advice to myself. But several months of throwing myself a pity party and physically feeling like crap got old, and so I decided to pull up my big girl pants and actually do something about it.

I decided that my first step would be to start my day off right with a super nutritious breakfast. I knew that if I could accomplish something positive first thing in the morning, I would feel good about myself and I would be more likely to stay on track the rest of the day. I’ve done this with workouts before and I knew how much it could boost my self esteem!

However since I am always short on time in the morning, I knew a smoothie was the only way to go because they are quick and easy and portable! Plus this way I could stealthily sneak in several servings of fruits and veggies into my diet. However, I also knew I had to find out a way to disguise the taste of any added vegetables or I wouldn’t want to drink it!

I ended up with a smoothie that tastes incredible, has tons and tons – and tons – of nutrients, contains five servings of fruits and veggies, is macronutrient balanced, and fills you up for hours. It’s so great that I almost called it The Miracle Smoothie. It’s that good!

Start Your Day Off Right Smoothie

INGREDIENTS

  • 1/2 cup of 1% milk (or unsweetened vanilla cashew milk)
  • 1 cup water
  • 1/4 ounce (snack size) fat-free peach yogurt
  • 1 cup mixed frozen berries
  • 1 frozen banana, chopped
  • 1/2 cup frozen kale or spinach
  • 1/3 zucchini, chopped
  • 1 scoop vanilla protein powder (I used Genuine Health fermented vegan proteins +)
  • 1 tbsp almond butter
  • 1 tsp maple syrup

INSTRUCTIONS

  1. Add all ingredients to a high speed blender in the order listed
  2. Blend until smooth
